About the colour: Groningen mustard
Groningers love to flavour their food with mustard made from mustard seed they grow on the local farmlands. Groninger mustard is recognizable by its coarse grind, and the spicy and sour (vinegar) flavour. Of the many mustard companies the province of Groningen once counted only one survived: Marne from 1895, based in the city of Groningen itself.
